Plot selection : The vines are located on limestone and clay-sandyloam soils, in the heart of a scrubland populated by holm oaks and pines of Aleppo.
Winemaking and Aging : Traditional winemaking process with 3 to 4 weeks maceration followed by 14 days of fermentation. Aging in concrete tanks during 8 months.
Tasting : This wine has a brilliant ruby color. The first nose is very fresh, with notes of redcurrant and cherry. It then opens up to notes of spices and garrigue. A fine, delicate nose. On the palate, notes of liquorice and zan, both fresh and spicy. A finish with notes of garrigue.
Aging potential : 5 to 7 years.
Serving temperature : 14-16°C
Pairing : Vegetables grilled a la plancha. Marinated peppers, roasted figs with goat cheese. Fresh goat cheese. Chocolate cake for dessert.
