Plot selection : The vines are located on limestone and clay-sandyloam soils, in the heart of a scrubland populated by holm oaks and pines of Aleppo.
Winemaking and Aging : Traditional winemaking process with 3 to 4 weeks maceration followed by 14 days of fermentation. Aging in concrete tanks during 6 to 8 months minimum.
Tasting : This wine has a beautiful purple colour, with bright reflects. The nose very aromatic remiding of the garrigue with thyme, cade wood and laurel notes. Also a side of fresh fruits, cherry. On the palate, a very airy, elegant wine. It is subtle, on cocoa and red fruit notes. A final on thyme and laurel notes.
Aging potential : 5 to 7 years.
Serving temperature : 14-16°C
Pairing : Charcuterie platter, brioche sausage. Black pudding with Cévennes onions. Cuttlefish with rust.
