Plot selection
The vineyards are located at 130 meters up hill on a gently sloping south-east facing slope. The clay-limestone soil is composed of clay loam and fragments of limestone from the erosion of the slopes, alternating with marls and marly-limestones. The soil provides the vineyards with great water reserve, which is good for vines and grapes maturities in our Mediterranean climate.
Cultivation mode
The vineyard has been managed in organic farming since 2006 and biodynamic practices have been introduced for 5 years.

Syrah : 70% Grenache : 20% Mourvèdre : 10%
Winemaking and Aging
Harvest by hand or by machine according to the plots. Entirely destemmed. Traditional winemaking process with 3 to 4 days maceration followed by 14 days of alcoholic fermentation. Temperature control during the winemaking process. Aging in concrete tanks during 6 to 8 months minimum.
Colour : Garnet color with brilliant reflections.
Nose : Aromas of dried figs, quince paste, garrigue and liquorice. A subtle and greedy fine nose.
Mouth : Aromas of fresh spices (pepper) and garrigue (laurel, thyme), accompanied by a mentholated touch. An aromatic mouth with velvety tannins.
Aging potential : 5 to 7 years.
Serving temperature : 14-16°C
Pairing : Red meats, dish with Mediterranean herbs, stuffed vegetables, tajine, red fruit soup.

Winemaking and Aging
Harvest by machine or by hand according to the plots. Entirely destemmed. Pressing after a short skin cold maceration. Cold settling without excess. Temperature control around 18°C during the winemaking process. Aging in stainless steel tanks during 4 to 5 weeks with lees.
Colour : Pale with green glints.
Nose : Fruity aromas, such as mango and ripe melon. Hints of apricot, citrus and acacia flower. Great minerality.
Mouth : Aromas of citrus, white fruits and peach. Round and fat wine, long-lasting aromas.
Aging potential : 3 to 5 years.
Serving temperature : 10°C
Pairing : Aperitif, fish, bouchées à la reine, white meat, gyozas.

Winemaking and Aging
Harvest by machine, early in the morning according to the plots. Partially destemmed. Cold pressing and juice selection. Cold settling without excess. Temperature control around 18°C during the winemaking process. Aging in stainless steel tanks during 4 to 5 months.
Colour : Rose petal colour with silver reflects.
Nose : Floral aromas such as lily of the valley, honeysuckle and elderflower, with a hint of red fruits.
Mouth : Delicate, gentle and balanced. Aromas of blossoms and white-fleshed fruits (pear Williams). Nice length and a slightly spicy finish.
Aging potential : 2 years.
Serving temperature : 10°C
Pairing : Aperitif, papillote of fish, ceviche, Asian food, shrimp with ginger sauce.

The grapes come from several vineyards planted on limestone soils. In the heart of garrigue and surrounded by Aleppo pines and green oak trees, the Mediterranean climate is quite cool.

Colour : Intense, luminous dark red colour.
Nose : Aromas of small black fruits, spices, evolving on violet and chocolate aromas.
Mouth : Beautiful balance in mouth with a juicy texture, gourmet notes of chocolate and delicate tanins.
Aging potential : 3 to 4 years.
Serving temperature : 13-14°C
Pairing : Platter of charcuterie, grilled pork chop, rib steak with pepper sauce.
