The vineyards are located at 130 meters up hill on a gently sloping south-east facing slope. The clay-limestone soil is composed of clay loam and fragments of limestone from the erosion of the slopes, alternating with marls and marly-limestones. The soil provides the vineyards with great water reserve, which is good for vines and grapes maturities in our Mediterranean climate. 

Cultivation mode

The vineyard has been managed in organic farming since 2006 and biodynamic practices have been introduced for 5 years.

Grapes varieties

Syrah : 80% Grenache : 20%

Winemaking and Aging

Harvest by hand or by machine according to the plots. Entirely destemmed. Traditional winemaking process with 3 to 4 days maceration followed by 14 days of alcoholic fermentation. Temperature control during the winemaking process. Aging in concrete tanks during 6 to 8 months minimum.

Colour : Purple color with brilliant reflections.

Nose : A nose on notes of garrigue, thyme, laurel, cade. Also fresh fruit, cherry.

Mouth : A very airy, elegant wine. It’s subtle, with notes of cocoa and red fruits. A final on notes of thyme and laurel.

Aging potential : 5 to 7 years.

Serving temperature : 14-16°C

Pairing : Assorted charcuterie, sausage with onions. Fish with slightly spicy sauce.

Harvest by machine or by hand according to the plots. Entirely destemmed. Pressing after a short skin cold maceration. Cold settling without excess. Temperature control around 18°C during the winemaking process. Aging in stainless steel tanks during 4 to 5 weeks with lees.

Colour : Pale gold colour.

Nose : A very expressive nose, slightly lemony that develops on notes of anise, floral. A slightly saline touch on the finish.

Mouth : A gourmet palate with notes of fresh pear, white flowers and eucalyptus. A beautiful balance.

Aging potential : 1 to 3 years.

Serving temperature : 10°C

Pairing : Salmon steak with fennel in papillotes. Grilled sea bream with aromatic herbs. For dessert, frosted lemon, meringue. Exotic passion fruit pavlova.

Harvest by machine, early in the morning according to the plots. Partially destemmed. Cold pressing and juice selection. Cold settling without excess. Temperature control around 18°C during the winemaking process. Aging in stainless steel tanks during 4 to 5 months.

Colour : Bright, brilliant colour.

Nose : Floral notes of jasmine on the first smell, which then develops on fruity aromas of redcurrant, fresh apricot, pomelo.

Mouth : This wine is lively and greedy on the palate. Notes of flowers, very balanced, good length. A finish on a slight sweetness, acidulous. Chewy and delicate.

Aging potential : 2 years.

Serving temperature : 10°C

Pairing :Grilled sausage with herbs. Fried noodles with shrimp and ginger. Greek salad. For dessert, strawberry cake with a hint of mint.

The grapes come from several vineyards planted on limestone soils. In the heart of garrigue and surrounded by Aleppo pines and green oak trees, the Mediterranean climate is quite cool.

Temperature control during the winemaking process. Aging in concrete tanks during 5 to 6 months minimum. This cuvée has been elaborated without added sulfites from harvest to bottling.

Nose : An expressive and seductive nose, on black cherry, cocoa.

Mouth : Mouth very fluid, fresh. Warm and greedy. Beautiful drinkability, on cherry notes, a peppery finish.

Aging potential : 3 to 4 years.

Serving temperature : 13-14°C

Pairing : Grilled meats, lamb chops, fougasse with black olives. Tapenade, pissaladière. Clafoutis.
