Plot selection
The vines are located on the Pic Saint-Loup appellation. They are planted on a soil resulting from the breakdown of calcareous rocks of the Quaternary period (Jurassic limestone, harder and older). These specificities offer fine and elegant wines, rich of the characteristics of this unique terroir
Cultivation mode
The vineyard has been managed in organic farming since 2006 and biodynamic practices have been introduced for 5 years.
Grape varieties
Syrah : 60% Grenache : 30% Mourvèdre : 10%
Winemaking and Aging
Harvest by hand or by machine according to the plots. Entirely destemmed. Traditional winemaking process with 3 to 4 months maceration in concrete tanks and conical trunk tanks. Temperature control during the winemaking process. Aging in concrete tanks during 12 months minimum.
Colour : Deep red, purple color.
Nose : A bright nose, very aromatic, which develops on notes of licorice, blackcurrant.
Mouth : A mouth with a beautiful volume, expressive. Tannins are supple and melted. Notes of red fruits, blackberries, blackcurrant, black olive. Also notes of cade. A peppery finish.
Aging potential : 5 to 7 years.
Serving temperature : 14-16°C
Pairing : Provencal vegetables, lamb tagine. Rack of lamb with rosemary. Daube. Tapas. Cheese assortments. For dessert, vacherin.

Winemaking and Aging
Harvest by hand or machine according to the plots. Destemming and direct pressing. Traditional winemaking process with temperature control. Aging in tanks during 3 to 4 months before bottling.
Colour : Pale, limpid, raspberry color.
Nose : A nose on red fruits, pomegranate and then evolves on white pepper.
Mouth : The mouth opens gradually. A gastronomic rosé with a nice material, structured. The final is liquorice.
Aging potential : 2 years.
Serving temperature : 10°C
Pairing : Arugula, mozzarella, veal or poultry. Marinated white meat, sautéed turkey. For dessert, with a tropezian, a vacherin, a blueberry pie or a sorbet.
