Plot selection : The vines are located close to the village of Vacquières, on a clay-limestone soil.
Winemaking and Aging : Pressing after a short skin cold maceration. Cold settling without excess. Aging in stainless steel tanks during 4 to 5 weeks with lees.
Tasting notes : A pale gold colour, clear. A very expressive nose, slightly lemony which then develops on notes of anise, floral notes. On the palate, it is greedy and enrobant with notes of fresh pear, white flowers and eucalyptus. A slightly saline touch on the finish. A complex, delicate and very balanced wine.
Aging potential : 1 to 3 years
Serving temperature : 9-10°C
Pairing : Salmon steak with fennel in papillotes. Grilled sea bream with aromatic herbs. For dessert, frosted lemon, meringue. Exotic passion fruit pavlova.
