Plot selection
The vines are planted on a soil resulting from the breakdown of calcareous rocks, made by water, frost and temperature change during one of the last cold stage of the Quaternary period.
Cultivation mode
The vineyard has been managed in organic farming since 2006 and biodynamic practices have been introduced for 5 years.
Grape varieties
80% Syrah 20% Grenache
Winemaking and Aging
Harvest by hand. Entirely destemmed. Traditional winemaking with 3 to 4 weeks maceration process followed by alcoholic fermentation during 15 to 20 days in conical trunk tanks. Temperature control during the winemaking process. Aging in French oak tuns during 12 to 14 months, then 3 months aging in vats before bottling and minimum 1 year aging in bottle.
Colour : Carmine colour, sustained intensity, luminous.
Nose : Intense and complex, with liquorice notes, menthol, spices, black olive.
Mouth : Powerful and suave, with fine tannins and volume. A long finish with black fruits, some minty and spicy notes, on a very fresh balance.
Aging potential : 7 years.
Serving temperature : 16-18°C
Pairing : Game, roe deer and lingonberry sauce. Cheese. Stuffed cabbage. Traditional French cuisine. Truffled dishes. Korean barbecue. Chocolate desserts.
