Plot selection : The vines are located on limestone and clay-sandyloam soils, in the heart of a scrubland populated by holm oaks and pines of Aleppo.
Winemaking and Aging : Mechanical harvest, at night. Fully destemmed. Direct pressing and selection of juice. Indigenous yeasts. Vinification in stainless steel tanks. Bottled in January and February.
Tasting : This wine has a pale colour, limpid. On the first nose, notes of jasmine, which then develop into fruity aromas of redcurrant, fresh apricot and pomelo. A lively, gourmet mouthfeel. Floral notes on the palate. Very well-balanced, with good length. Sweet, tangy finish. A sapid wine.

Serving temperature : 10°C
Pairing : Appetizer. Grilled sausage with herbs. Parsley razor clams, fried noodles with shrimp and ginger. For dessert, a strawberry dish with a hint of mint and a verbena moelleux.
