Plot selection : The vines are located close to the village of Vacquières, on a clay-limestone soil.
Winemaking and Aging : Pressing after a short skin cold maceration. Cold settling without excess. Aging in stainless steel tanks during 4 to 5 weeks with lees.
Tasting notes : This wine has a nice pale gold colour with silver highlights.. A first nose on white flowers, jasmine, which then develops on notes of almond, frangipane. An expressive palate, acidulous with a beautiful
length. Aromas of white flesh fruits. Complex, ample and balanced.
Aging potential : 1 to 3 years

Pairing : Grilled fish, prawns. Fresh tagliatelle with clams. Fresh goat cheese, manchego. Mellow with almonds, fougasse d'Aigues-Mortes
