Plot selection : The vines are located close to the village of Vacquières, on a clay-limestone soil.
Winemaking and Aging : Pressing after a short skin cold maceration. Cold settling without excess. Aging in stainless steel tanks during 4 to 5 weeks with lees.
Tasting notes : A pale gold colour, clear. A complex, fresh nose with notes of orange blossom and eucalyptus, which then develops into slightly lemony aromas.
Well-balanced and complex on the palate. Notes of pomelo zest. In the mid-palate, notes of white peach and fresh pear. A rich, long wine with good acidity.
Aging potential : 1 to 3 years
Serving temperature : 9-10°C
Pairing : Pear, gorgonzola and walnut risotto. Carpaccio of scallops. Fish paella. For dessert, exotic pavlova, mango and passion fruit panna cotta.
