Plot selection : The grapes come from vineyards planted on limestone and sandy-loam soils, in the heart of garrigue and surrounded by Aleppo pines and green oak trees.
Winemaking and Aging : Traditional winemaking with short maceration of 3 to 4 days followed by alcoholic fermentation for 10 days. Aging in concrete tanks.
Tasting notes : This wine has a brilliant ruby color. A nose on black cherry and eucalyptus. Cocoa notes. A pleasant nose, intense and structured. On the palate, a fresh wine with a beautiful structure, very greedy.
Aging potential : 3 to 5 years
Serving temperature : 14-16°C
Pairing : Grilled meat, chops, burger. Roasted camembert. Chakchouka, grilled peppers, piquillos. Goat cheese with black cherry jam.
