Story of this wine
For this wine, we wanted to isolate the finest expression of the Rolle white grape variety, a grape with mediterranean roots and emblematic of the estate — in order to create a unique and invigorating wine, to be shared both on special occasions and for the small celebrations of everyday life.
Plot selection
The vineyards are located at 130 meters up hill on a gently sloping south-east facing slope. The clay-limestone soil is composed of clay loam and fragments of limestone from the erosion of the slopes, alternating with marls and marly-limestones.
Cultivation mode
The vineyard is certified in organic farming since 2009 and biodynamic farming since 2018.

Winemaking and aging
Manual or mechanical harvesting depending on the plot, very early in the morning. Completely destemmed. Pressing after a short cold skin maceration and then selection of the dripping juices. First fermentation with natural yeasts. Cold settling. Controlled vinification temperature around 16°. Second fermentation in the bottle. Bottled at the estate. Without disgorgement. Extra-Brut.
Colour : Pale color with silver reflects.
Nose : Very elegant and expressive nose, revealing delicate notes of white flowers, pear and chamomile.
Mouth : Fresh and tense palate, carried by notes of white-fleshed fruits, pineapple and yuzu lemon. The bubbles are very fine. A mouthwatering wine.
Aging potential : 1 to 3 years.
Serving temperature : 8°C
Pairing : Gravlax salmon, gratinated oysters, fresh and creamy cheeses, almond-flavored frangipane tart.
