In this cuvée time and terroir are kings. It is through an atypical and exceptional soil made up of limestone fragments, that grow our vines of Syrah and Grenache more than 30 years old, that we harvest by hand. We sublimate this cuvée by a adging of 12 to 14 months in French oak tuns, and minimum 1 year aging in bottle. That this wine wins its spurs.
The 2019 vintage was marked by favorable weather conditions. This spring was mild with moderate rains, which contributed to a regular flowering of the vine. The summer was hot and dry, promoting optimal ripening of the grapes. Finally, during the harvest, we had some rainy episodes, which allowed to maintain the watering of the vines while maintaining the balance of the grapes.
During the tasting, you will notice its purple and very bright colour. Its nose, both deep, intense and greedy, will surprise you with its notes of ripe fruit, spices (cinnamon) and liquorice. On the palate, you will discover a nice freshness, fine grain of tannins, and notes of thyme. A finish on notes of wild blackberries. A wine with a great complexity.
To sublimate this cuvée, we recommend pairing it with venison and cranberry sauce. The complex and balanced flavours of this wine will blend perfectly with the tender meat of the venison; the spicy notes will delicately enhance the cranberry sauce.
For dessert, it will accompany a dark chocolate ganache.
